At Mælkevejen Distillery, we are a good mix of people from the restaurant industry, including those behind cocktail bars such as Ruby, Lidkoeb, and Brønnum, as well as individuals from spirit import and distribution, all with a penchant for spirits of the highest quality.

Together, we have over 80 years of experience in the spirits industry, which we leverage in the creation of our products.

Rasmus Shepherd-Lomborg

Rasmus Shepherd-Lomborg met Adeline while working in a cocktail bar in Edinburgh in 1999, and has been unable to leave both Adeline and the hospitality industry ever since.

Rasmus deals with the less glamourous side of the distillery (and is kindly asking you to remember to flush..) and tries to avoid depression while dealing with the distillery’s car-crash economy.

He also looks after the kiddos on weekends, when Adeline serves Fury & Tonics to the lovely guests in Mælkevejen’s bar.

Toke Søren Christensen

Toke is original from the outskirts of Viborg in Jutland, but don’t let that fool you; he is a full-blown hillbilly. Brought up on a blend of corn and moonshine, Toke is perfectly cut out for distilling spirits.

Toke has been bartending in numerous bars over the past two decades, before he fell in the copper pot and found his true calling.

Toke is a handyman to the bone and has almost singlehandedly rebuilt the old dairy into the distillery it is today.

Adeline Shepherd-Lomborg

Meet Adeline Shepherd-Lomborg. Hailing from Scotland, but with a Sri Lankan mother, Adeline has been working in cocktailbars since forever, in the UK as well as Denmark.

In Copenhagen, she and Rasmus opened acclaimed cocktailbars Ruby, Lidkoeb & Brønnum, before changing lanes and devoting herself to distilling, opening Mælkevejen Distillery in 2023.

Adeline’s palate is a dealbreaker in Mælkevejen Distillery, and we can’t wait to see what products she comes up with next. In the meantime we will have to live with her sub-par sense of humour.
